VALIDATION OF A SENSORY ANALYSIS TEST WITH PRESCHOOL CHILDREN

An accurate sensory test requires a clear understanding of the objectives, and both the researcher and the individuals undergoing analysis must express themselves without ambiguity. The objective of this work was to evaluate the sensitivity of the affective test that uses the 7-point facial hedonic scale for preschoolers, through a validation study. The protocol was approved by the Ethics Committee of the Faculty of Medical Sciences of the Pontifical Catholic University of Campinas. Children aged 4 to 6 years old, of both sexes, belonging to two social strata were studied: schoolchildren from the public school system in underprivileged regions in the city of Campinas, SP, and schoolchildren from the private school system. Both groups tasted a reference food with a good flavor, and another with a different flavor, intended to cause dissatisfaction. The judgments were compared with the flexibility measure, obtained by weighing the rest.
The association between qualitative variables was estimated using Fisher's test. Food with a good taste was rejected by 10.81% and 8.11% of careful and non-needy students, respectively, and food with a different flavor was rejected by 64.39% and 67.65% of the same groups. The analysis of the results showed that there is no association between the accessible variables and the record of the degree of satisfaction (p > O, l 00), except for the group with low purchasing power, in relation to food with a different flavor (p = 0.005) . It was concluded that food with a different flavor was recognized as unsatisfactory, purchasing power did not influence the accessibility of food and the 7-point facial hedonic scale test used was not sensitive to measure the satisfaction of preschoolers.
